Juniper Thyme Simple Syrup

Herbal with pine notes, this syrup pairs well with gin, elderflower and pear.

Ingredients

  • .5 cup water

  • .5 cup granulated sugar

  • 2 tablespoons juniper berries

  • 6 sprigs fresh thyme

Directions

  • Muddle the juniper berries and thyme in a small saucepan. Add sugar and water and bring to a simmer, stirring until sugar is dissolved. Remove from heat and let cool to room temperature. Strain, discard solids, store syrup in refrigerator for up to four weeks.
